Gai Lan, Snapper and Shiitake Miso Soba Recipe

This Japanese inspired noodle dish, packed with greens and protein, is all taste and no fuss. Quick and easy to whip up, and bursting with umami flavour… mmmm miso-hungry!

Shiitake contains a high level of copper, which is an essential mineral to support energy production and maintain normal immune function.


  • 1 bunch of gai lan chopped
  • 2 small fillets of snapper cubed
  • 3 teaspoons of Zoi Shiitake Mushroom Powder
  • 2 teaspoons of ginger chopped
  • 1 garlic clove sliced
  • 20ml ‘spiral foods’ tamari
  • 2 large tablespoon of sweet red ‘meru’ miso
  • 1 squeezed lime
  • 2 stalks of spring onion chopped
  • 2 tablespoons of coriander
  • A pinch of sesame seeds
  • ½ packet of ‘spiral foods’ buckwheat soba
  • 10ML sesame seed oil,
  • 10 cherry tomatoes halved
  • 1 grated zucchini


  1. Cut the snapper in bite size cubes, and prepare the miso sauce by thinning the paste in a bowl with some warm water
  2. Boil the water for the soba, when ready cook them and set aside
  3. On a high heat pan, drizzle the sesame seed oil, and when hot throw the snapper and cook it for about 4 minutes, tossing it gently
  4. Remove and set aside when ready
  5. In the same pan, cook the ginger and garlic for a few minutes, throw the gai lan, cook for 2 minutes, add tomatoes, zucchini and cook for another 2 minutes
  6. Add the snapper, miso and toss gently, add the soba
  7. Remove from the heat, squeeze the lime, add the spring onion, coriander and serve in bowls
  8. Sprinkle in the sesame seeds and serve
